Paleo, AIP, GAPS and SCD Friendly
1 pound pork roast
1.5 TBSP maple syrup (for GAPS and SCD use raw honey)
3 TBSP extra virgin olive oil
1.5 TBSP balsamic vinegar (omit for GAPS and SCD or substitute coconut aminos)
1.5 TBSP lemon juice
1.5 TBSP raw apple cider vinegar
½ TBSP dried thyme
1 tsp sea salt
1 TBSP marjoram (dried herb)
1-2 TBSP Coconut oil (for cooking step)
1-2 cup coconut water (for cooking step)
Combine all ingredients in a jar and mix well.
Pour over the pork (in a glass bowl with lid) and marinade for 12-24 hours (24 hours is recommended), turning the roast a few times to re-coat with the marinade.
When ready to cook, add the coconut oil and coconut water to your slow cooker or Instant Pot then add the meat.
For slow cooker, cook for 7-9 hours on low or 5-7 hours high in a slow cooker.*
For Instant Pot, set to manual for 90-120 minutes.*
*Actual cooking time will depend on the size of the roast.
